What I've Been Up to in the Kitchen

I'm SO excited to finally have a kitchen of my own, and I've been using it to its full potential lately. I never seem to have a clean sink (except now, after cleaning my way through a huge pile of dishes). Here are the wonderful things I've tried in the last couple of weeks, but haven't gotten to post about:


We made breakfast burritos with leftovers from some grilled vegetables and steak


Strawberry Rhubarb Crumble- I got a little hungry and forgot to take a picture before I ate some! 
It tasted like warm jam covered with a crumbly, crunchy topping. Highly recommend! From Bon Appetit


Just some sauteed mustard greens, broccoli, mushrooms over roasted purple potatoes. Yum!


Cardamom Oatmeal Pancakes- I made a batch and froze it for quick breakfasts. I thought they were wonderfully hearty pancakes, even though I am boosting the amount of cardamom in the next batch I make.


Simple dinner of chicken sausage, broccoli and rice.



One of my crazy ambitious nights: Black Bean Hummus, Corn Chips, and Soft Chicken Tacos from Whole Grains for Busy People. But it was so delicious- the only thing I'll really change is adding some chili powder to the chicken tacos because they just weren't that spicy. 

And I can't wait to keep on cooking! Yay! 

Oh, and I made rhubarb streusel muffins and strawberry freezer jam, but I already put them away in the freezer and forgot to take a picture! But they were both delicious.

Craziness

I finally have internet! I just moved into my new apartment last Sunday and have been trying to get internet and moving everything around, but its finally here! I made a couple of great recipes lately and will be sharing soon, but have a wonderful night!

I'm glad to be back with the internet!

Tacos!

I had a craving for tacos on Monday, so Jonathan and I went out to Taco Boy in Charleston.

Oh my GOODNESS! It was so delicious! Most of their tacos were a riff on traditional Mexican flavors, and everything we had was delicious!

We started out with cocktails- I got a skinny pinapple-infused margarita and he got a frozen screwdriver.


Then, we got queso. YUM! (a little over-priced, but still delicious)


And for our tacos!!! I got the grilled fish taco and the al pastor (pork) taco.



And Jonathan got two tempura shrimp tacos and a chorizo and potato taco. All of his were fabulous!


We had a great night out. Now I'm off to do more DIY projects before I leave home on Sunday to go to my summer apartment! Have a wonderful day!

Back!

I'm finally back to a *somewhat* normal lifestyle- vacation for a week at home and then to my new apartment to start my internship for the summer!

But I'm most excited about cooking and crafting on a more regular basis now that finals and group projects are done until late August/ September!

For Mother's Day, we celebrated by going to church and taking the boat out with the family. It was such a gorgeous day with a breeze! And I finally got more work done on my tan :)

It was a simple afternoon, and for dinner, we made pasta with sauteed vegetables and shrimp. Delicious!



 I can't wait to be back and posting more this week! I have a ton planned (both recipes and craft projects!) so stay tuned!

Inspiration Monday

I wanted to switch it up a bit, so here's my current inspiration board hanging over my desk! I just chopped up a bunch of magazines over the weekend to refresh it with bright, spring colors! As much as I love Pinterest, its fun having a tangible inspiration board in front of me!
