IKEA!

This week was a little crazy- classes are over, so my schedule was thrown out the window and now I've got a lot of loose ends to tie up, three exams next week and moving into my new apartment for the summer.

But my friend, Melanie, and I decided to skip town Tuesday afternoon and head to Charlotte! For REI and Ikea, of course! With a little Anthropologie and Sur la Table stirred in! I can't wait to share what I bought with y'all, but its all packed up in the car for moving this weekend!

But I am officially in love with Ikea. I foresee another visit this summer after my wallet recovers from this trip! (Just kidding... I spent a lot more in my head than for real, but I really can't wait to go back!)




I was *this* close to buying a canopy, but I decided against it. For this trip!


They have a new children's book about the vegetable patch! Broccoli and Carrot are the heroes!




Sigh... what a wonderful afternoon to get me through finals! Have a wonderful weekend- I'll be moving and helping a couple of friends move too!

Tornados

Please pray for all of the areas affected by tornadoes- the fatality count keeps rising as the destruction is being cleared away.

I've got some friends in that area and the devastation is headed up the East Coast.

Frittata and Pictures

I was inspired to make this lovely frittata after talking to one of my friends. I mentioned to her that I still had some purple spring onions from the farmer's market and I really wanted to showcase them in a dish, so their unique color and sweeter flavor wouldn't be lost. 

She suggested a frittata, based on pictures she had seen of asparagus laid delicately on top. So, I took the idea and ran with it!



I added in 3ish cups of Russian Red Kale that I also had from the farmer's market and added in some asparagus.  I used this recipe as a base and just added the extra vegetables.  Yum! I think I needed to drain the vegetables a bit more, because the frittata was a little watery, but it was a great first attempt!

Oh, and here are some pictures from my trip to the mountains with some ladies from my church last weekend. I completely forgot to share them earlier this week! It was so peaceful to walk along the trail!

New Book: Super Natural Every Day

I am SO GLAD that I preordered Heidi Swanson's new book, Super Natural Every Day. I got it in the mail from Amazon and I'm so ready to start cooking out of it! Her recipes are vegetarian and focus on healthy foods that bring tons of benefits through choosing the right ingredients.

I've been following Heidi's blog for a little while now, and bookmarking recipes. When I saw that her book was available on Amazon, I quickly added it to my cart. My free priority shipping via Amazon Prime for Students didn't hurt either :)  (Its the second time I've preordered books from Amazon and I really like having the books in my mailbox within a day of the release date! And I avoided the lines at the bookstore!)
