Frittata and Pictures

I was inspired to make this lovely frittata after talking to one of my friends. I mentioned to her that I still had some purple spring onions from the farmer's market and I really wanted to showcase them in a dish, so their unique color and sweeter flavor wouldn't be lost. 

She suggested a frittata, based on pictures she had seen of asparagus laid delicately on top. So, I took the idea and ran with it!



I added in 3ish cups of Russian Red Kale that I also had from the farmer's market and added in some asparagus.  I used this recipe as a base and just added the extra vegetables.  Yum! I think I needed to drain the vegetables a bit more, because the frittata was a little watery, but it was a great first attempt!

Oh, and here are some pictures from my trip to the mountains with some ladies from my church last weekend. I completely forgot to share them earlier this week! It was so peaceful to walk along the trail!

Finished Tee!

I finally got around to finishing up this idea I had for a shirt that had gotten a small oil stain somehow. I really like how it turned out!

I used a leftover doily from Valentine's Day and used a metallic peacock-like color of this fabric paint  that I ADORE because you iron the back and then you can wash whatever you have painted on!

Lemony Goodness

In an effort to use up my 1) bag of meyer lemons and 2) eggs before leaving for Spring Break, I just had to whip up another batch of microwave lemon curd. I made it last year about this time and it is just phenomenal.  And it can be done in a microwave in about half an hour.


And after completely forgetting about a dinner date with some friends, I whipped up some sugar cookies to go with the lemon curd. Fantastic! I used this sugar cookie recipe because it didn't require any rolling out or chilling, and they turned out good. Maybe a bit more sugar would help if you ate them plain, but they were great with the lemon curd!

Bonus pics: rainbow and its secondary rainbow (very faint) after our rainstorm on Saturday! The sky was gorgeous then too. I couldn't resist taking these pictures!

SNOW DAY!


Last night, our campus was given a little treat by the University- this lovely message on the website:

Because of winter weather conditions, the University of South Carolina Columbia campus will be closed Monday, Jan. 10.


HOW WONDERFUL! So our first day of classes was not filled with syllabuses and new classmates, but snowball fights, snowmen and hot chocolate with friends.



Not mine, but still hysterical. There was another one that looked like a huge gummy bear, too.
 




 
Yes, a significant amount of snow in COLUMBIA, SOUTH CAROLINA. Its wonderful.  And we're all crossing our fingers that the icy conditions will delay/cancel classes tomorrow too! But we can only hope at this point.

Yay for snow! Its just so pretty because it'll melt before it gets nasty!

Hello!

Its been a lot longer than I anticipated getting back blog-land after Christmas- one of my best friends got married on New Years Day so the week before was a little crazy and then I left to come back to school on Wednesday in the early morning. It was crazy once I got here with training and getting the residence hall ready for my lovely ladies on my hall and I've been reorganizing and getting settled in for classes on Monday. Its making me just a little tired just reading through everything I've been up to!

But the last couple of weeks have been so wonderful- I've spent a lot of time with my family and my boyfriend's family, it snowed (in Charleston, SC so a BIG deal) the day after Christmas, spending time with my newly-married friend before the wedding and packing to see all of my wonderful friends here at school. Oh, and baking and cooking a lot.

That was the last of the pictures that I took at the wedding- we had such a great time and didn't have time for pictures! When I get a hold of some of the pictures my friends took, I'll post them here! The whole wedding was just so special and the newlyweds were just so fun to watch- their love was so apparent, it was tear-provoking!

Other than the wedding, packing up and then unpacking have taken over my life, but I'll be posting more regularly now that my schedule is back to normalcy. Have a wonderful day!
